Pea Soup

500g fresh or frozen peas

1 liter stock (veggie or chicken)

1 medium sized onion

250 ml whipping cream/heavy cream

Chives to garnish

Peel and mince the onion.

In a large pot, put 1 l of water, add the onion and the peas and the stock cubes. Boil for appx. 15 min. Separate (but save) most of the liquid. Put the rest in a blender and blend until no large pieces remain. Mix the liquid and the blended parts back in the pot, and heat up to a boil. At a boil, turn off the heat and mix in the cream.

Decorate with finely chopped chives to serve.
