Ingredients
700g of carrot
70 grams of freshly grated parmesan
2 tablespoons of olive oil
2 large garlic cloves minced
2 teaspoons of paprika
1 teaspoon of cumin powder
1/2 teaspoon of chilli powder
Handful of fresh parsley
Pinch of salt
Method
Preheat oven to 200c. Prepare carrots by peeling them and slicing them in half lengthways, and then in half again so that each piece has a flat side.
In a large bowl, drizzle the olive oil, minced garlic, paprika, cumin, chilli, parsley and salt. Mix together to make the marinade for the carrots.
Add the carrots to the marinade mixture and toss to combine so that all the carrots are fully coated.
Sprinkle a handful of freshly grated parmesan to a non stick oven dish or baking sheet.
Dip the flat sides of the carrots into the remaining parmesan cheese and place them cheese side down on the baking sheet/dish. Repeat this with all the carrots and make sure that their are no gaps between the carrots.
Roast for 20-25 minutes. Make sure that the carrots are cooked.
