Cookies

115 g butter

150 g brown sugar

1 egg

1/2 tsp vanilla extract (or1 tbsp vanilla sugar)

125 g flour

0,5 tsp baking powder

0,5 tsp baking soda

0,5 tsp salt

70 g oatmeal

 

Heat up oven to 180 C

Beat sugar and butter together with a hand mixer until combined and no clumps of butter or sugar remain.

Add in egg and vanilla and mix until smooth.

Combine all the dry ingredients and add in smaller batches, always mixing to a smooth consistency.

Roll into balls about 2.5 cm (1 inch) in diameter and bake on baking paper in the middle of the oven for 12 min, then let cool for a couple of minutes before transferring to a suitable contained. 

12 min at exactly 180C in our oven is the sweet spot for getting cookies that are nicely chewy. If you make smaller balls of dough (for more cookies per batch), 12 min will make the edges quite crispy - so bake a little shorter for the chewy effect. More than 12 min will make the cookies much less chewy and more brittle. Try it and figure out what's right for your oven and preferences.
